Apricot & Almond Protein Balls

My favourite flavour variation of my favourite healthy snack!

Loaded with protein, fibre and healthy fat, these are a convenient snack option to keep you satisfied between meals.  Naturally sweetened with apricots and only a handful of ingredients, they’re quick to make and sure to satisfy. I make mine into bite sized portions and enjoy 2 or 3 for morning or afternoon tea and they’re ideal in lunch boxes, cheese boards, social gatherings and in gift jars.

Ingredients

✦ 1 cup Rolled Oats
✦ 1/2 cup Medjool Dates
✦ 2 tablespoons Coconut oil
✦ 1 scoop of IsaPro [Vanilla Protein Powder]
✦ 1/4 cup dry roasted Almonds
✦ 1 cup of dried Apricots

Method

✦ Measure out your dates and soak in boiling water for 5 minutes.
✦ Drain excess water and allow to cool.
✦ Add the rest of your ingredients to your food processor along with the softened dates.
✦ Gently pulse until all ingredients are chopped and mixed thoroughly.
✦ Wearing gloves [or wet hands], roll small balls and place in a bowl.
✦ Once all the mixture is used up, swirl the bowl to ensure each ball has a light coating of chia seeds.
✦ Allow to set in the fridge for a good half hour.

                   

 

Tips

✦ If they seem dry or crumbly, add a small amount of water, coconut oil or maple syrup to the mix.
✦ For some extra healthy fat goodness and crunch – add pepitas, sunflower seeds or both.
✦ The chia seeds are optional. They are nutrient dense and add nice crunch!
✦ Your protein balls should be stored in an airtight container in the fridge and can last for up to 1 week [you’re kidding yourself if you think they’ll last that long!] and up to 2 months in the freezer.
