Mexican Dip

Our trees are bursting with fresh, spray free lemons and avocados which certainly inspired this dish!

This protein-packed Mexican Layer Dip is easy, fresh, flavourful and delicious – not to mention healthy.

Ingredients:

✒ 2 cans Refried [Pinto] Beans.
✒ 4 ripe Avocados
✒ 1 Lemon
✒ Chopped Capsicum
✒ Diced Red Onion
✒ Small tin of Corn
✒ Salt & Pepper
✒ Coriander

Method

✒ Layer Beans in a dish.
✒ Mash Avocados and mix through the remaining ingredients.
✒ Top with diced Tomatoes, fresh Coriander and Feta [omit for a vegan option].
