Apricot & Banana Oat Slice

Here’s a scrumptious and wholesome guilt free snack to satisfy your sweet cravings!

Packed with the goodness of ripe bananas, oats, dried apricots and more – this recipe is not only easy to make but also highly customisable to suit your taste buds and dietary preferences.

Ingredients:
✻ 4 ripe bananas
✻ 2 cups of oats
✻ 1/2 cup of chopped dried apricots
✻ 1/2 cup of chopped dates
✻ 1 tsp cinnamon
✻ 1/4 cup of chopped or slivered almonds [or your choice]
✻ 1 scoop [30g] vanilla protein
✻ Optional Garnishes: Choc drops, pecan nuts, chia seeds, pepitas, and sunflower seeds.

Method
✻ Preheat your oven to 350°F (175°C). This ensures that your slice will bake evenly.
✻ Mash the ripe bananas using a fork or potato masher until they have a smooth consistency.
✻ Add the oats, protein powder, cinnamon, chopped dates and apricots, nuts and mix until well combined.
✻ Line a slice tray with parchment paper to prevent sticking.
✻ Transfer the mixture to the prepared baking dish, spreading it out evenly.
✻ Sprinkle a generous amount of chia seeds, pepitas, and sunflower seeds over the top for added nutrition and a delightful crunch.
✻ Gently press the mixture into the tray using the back of an egg flip.
✻ Bake for around 30 minutes, or until the slice turns a lovely golden brown.
✻ Once baked, allow to cool then slice into bars or squares of your preferred size.

      

Tips
One of the best things about this recipe is its adaptability. Over the years I’ve played with many variations. Here are a few ideas.

Fruit Variations:
Instead of using all four bananas, consider substituting some with mashed pear or apple for a unique flavour twist. And if you’re not a fan of dried apricots, try dried cranberries or apple.

Nut Choices:
Experiment with different nuts. Try walnuts, pecans, pistachios or a combination of your favourites to add nutty crunch.

Last but not least, adding coconut oil added to your mixture and honey or maple syrup drizzled over your slice just before baking are other options.
