Hasselback Chicken

Hands down the quickest, most delicious chicken and veggie meal! Well, I think so anyway!

Thing I love about this way of preparing chicken is that there are a multitude of variations you can try – so you’ll certainly never tire of it! You can be intentional about the combinations or like myself, you can use up whatever ingredients you already have.

In time, I’ll aim to create other ingredient options which I’ll update here for you.

The following version is very simple yet delicious

Ingredients

✦ Chicken breasts
✦ Mushrooms
✦ Zucchini
✦ Capsicum
✦ Onion
✦ Tomato
✦ Sweet Potato
✦ Garlic
✦ Butter
✦ Salt + Pepper

Method:

✦ Slice your chicken around 3/4 of the way through.
✦ Finely slice your veggie ingredients.
✦ Place layers of veggies in each slice. [Doubling up if you’d like]
✦ Season with salt and pepper and any other spices [I like garlic and chilli]
✦ Melt 1tsp of butter, mix through a little minced garlic and drizzle over the entire breast.
✦ Air Fry or bake in a pre-heated oven for 20 – 25 mins at 200°C [varies depending on size]
✦ Check your chicken with few minutes to go and top with a light sprinkle of cheese if you wish and bake until melted.

Once done, the top should be Crispy and crunchy and the chicken juicy and tender.

Serve as is or on a bed of mash.
