This Middle Eastern classic, a harmonious blend of gently poached eggs in a hearty spiced tomato blend, is a feast for the senses. This recipe strikes the perfect balance between the warmth of spices, and the rich flavour of tomatoes, onion and capsicum. Whether enjoyed for breakfast, brunch, or a comforting dinner, Shakshuka is a versatile and healthy dish that captures the essence of comfort in every spoonful. Eat as is or serve with fresh sourdough.
Ingredients:
✦ ½ medium onion, diced.
✦ ½ capsicum, seeded and diced.
✦ 2 garlic cloves, finely chopped.
✦ 1 tsp paprika
✦ 1 tsp cumin
✦ ½ teaspoon coriander
✦ 400g tin of tomatoes [or 6 fresh tomatoes, diced]
✦ 4 – 6 eggs
✦ Salt + pepper to taste.
Optional:
✦ ¼ tsp chilli powder ✦ Crumbled feta ✦ Chopped Parsley ✦ Avocado
Method:
✦ Heat olive oil adding onion, capsicum and garlic – cooking until onion is translucent.
✦ Add garlic and spices and cook for a further minute.
✦ Pour over the can of tomatoes and stir well.
✦ Season with salt and pepper and bring sauce to a light simmer.
✦ Using a spoon, create small wells in the sauce for your eggs, then crack and cover.
✦ Keep sauce at a gentle simmer checking only occasionally until eggs are cooked to your liking.
✦ When your eggs are almost done, add your crumbled feta then recover.
✦ Add Avocado chunks or slices and garnish with parsley before serving.
