Ingredients:
✻ 1 Salmon fillet
✻ 100g Pearl Couscous
✻ 1/2 Red Onion, sliced
✻ 1/3 cup Cucumber, diced
✻ 1/3 cup Capsicum, diced
✻ 1/2 Lemon or Lime [juiced]
✻ 1 shallot diced
✻ Fresh mint [to your liking]
✻ Salt + Pepper to taste.

Method:
✻ Add 100g of Pearl Couscous to 200ml of boiling water.
✻ Cover and simmer for 10 minutes until liquid is absorbed – stirring occasionally.
✻ Once cooked, allow to cool to a warm temperature.
✻ Season your Salmon with salt + pepper and pan fry on a medium heat.
✻ When your Salmon is almost cooked push to the side and cook your onion for 1 minute to soften.
✻ Set aside.
✻ Slice and dice onion, cucumber, capsicum, shallots and mint.
✻ Once your Couscous has cooled enough, add your chopped ingredients including your flaked salmon.
✻ Add chopped mint, salt, pepper and lemon to taste – gently mix, serve and enjoy!
