Healthy Chicken Bites

If you’re looking for a healthy and tasty alternative to traditional chicken nuggets, you’re in for a treat! These crunchy homemade chicken bites are not only easy to make but also packed with flavour. With just a few simple ingredients you can whip up a batch that the whole family will love.

 

Ingredients:

∾ 1 chicken breast
∾ 1 egg
∾ 1 potato
∾ 1/2 onion
∾ 1/2 tsp all-purpose seasoning
∾ 1/2 tsp paprika
∾ Chopped parsley (or dried parsley)
∾ Salt and pepper to taste
∾ 1 tablespoon cornflour
∾ Crushed crackers or breadcrumbs (for coating, optional)

Method:
∾ Add chopped chicken, onion, peeled potato, cornflour, salt + pepper and herbs to your food processor and blitz until all ingredients are well combined.
∾ [optional] Transfer the mixture into a bowl and cover it with cling wrap. Refrigerate for at least an hour. This chilling step will make the mixture easier to work with and shape into balls.
∾ After the mixture has chilled, using wet hands [to prevent sticking], shape the mixture into small balls or classic nugget shapes, depending on your preference.

             

Air Frying [My pick!]: Air fry for approx 15 minutes at 200°C turning once to ensure even browning.

Pan Frying: Pan-fry in a small amount of oil until golden brown and cooked through.

Enjoy as a high protein snack or serve with salad or veggies as a meal as they are or with tomato, bbq or sweet chilli sauce – and don’t be afraid to get creative and experiment with different herbs eg garlic powder, thyme, or even a pinch of chilli flakes for a little heat!
