Banana Protein Pancakes

Nutritious and delicious, these wholesome pancakes are an excellent breakfast or post-workout option. With the natural sweetness of ripe bananas,  a protein boost, and a touch of cinnamon, you can whip these up in no time and they literally melt in your mouth.

Ingredients

✦ 1 ripe banana
✦ 1 scoop [30g] vanilla protein powder
✦ 2 eggs
✦ 1/2 tsp baking powder
✦ 1/4 tsp cinnamon powder

Method

✦ Roughly chop the banana into a blender cup.
✦ Crack and add eggs, vanilla protein, baking powder and cinnamon in the blender cup and blitz.
✦ Melt butter in a frying pan on a medium/high heat.
✦ Pour your mixture making bike sized pikelets or a larger pancake size if you’d rather.
✦ Flip after around 1 minute – you can gently lift one edge to check.
✦ Once golden brown on both sides, dress your pancakes or enjoy them as they are!
✦ Best served warmed while they’re soft and fluffy.

               

 

Variations

Enjoy as they are or you could dress with jam, honey, maple syrup, fresh fruit and greek yogurt, nutella [wink wink] or once you’ve poured the batter you could add blueberries or choc chips before you make your first flip. Choose whatever is in alignment with your goals. Another delicious variation is swapping vanilla protein for chocolate protein and adding 1 tsp of peanut butter powder!
