Vegetable Fritters

Packed with wholesome goodness and full of flavour, these fritters are not only delicious but also incredibly easy to make. With just a handful of simple ingredients and the convenience of air frying, these is ideal if you’re looking for a quick and satisfying snack or a flavourful side dish.

Plus, with the magic of air frying, you can enjoy all the crunch without the guilt of deep frying.

You can use an all-purpose flour, or for a lower carb, gluten free option go for almond flour.

Ingredients:
➛ 2 zucchinis [medium]
➛ 1 small tin of corn kernels.
➛ 1/4 cup grated parmesan cheese [or feta if you’d prefer]
➛ 1/4 cup onion
➛ 2 eggs
➛ 1 cup almond flour
➛ 1 tsp baking powder
➛ 1 tsp salt
➛ 1/2 tsp pepper

Optional additions:
➛ carrot, capsicum, shallots, broccoli, bacon, corned silverside, herbs & spices.

Method:
⇢ Grate zucchinis and squeeze out as much liquid as possible. The more you remove, the crunchier your fritters will be.
⇢ To your zucchinis, add drained corn kernels, grated onion, beaten eggs and mix through.
⇢ If you are adding any extra veggies, now’s the time.
⇢ Finally, add almond flour, baking powder, salt and pepper and mix until all ingredients are combined well. You can thicken your batter with extra flour if necessary.
⇢ Using a spoon, scoop mixture onto your air fryer tray lined with baking paper.
⇢ Lightly spray the top of each and cook for 6 – 8 minutes at 180°C
⇢ Flip your fritters, give each another light spray and cook for a further 6 – 8 minutes, or until browned.
⇢ Cooking time and temp may vary depending on your air fryer.

Serve warm on their own or with your favourite sauce, greek yogurt or sour cream.
