This delicious, light and fluffy cake calls for only 5 ingredients, is gluten free and so simple to make.
Ingredients
ꕤ 4 eggs [separated]
ꕤ 400g Greek Yogurt [full fat]
ꕤ 4 tbs Corn Flour [or Corn Starch]
ꕤ 1/2 tsp Baking Powder
ꕤ 4 tbs Sugar
Method:
ꕤ Pre-heat the oven at 170°C
ꕤ Add sugar and 4 egg yolks to a bowl – whisk well.
ꕤ Add baking powder and Corn Flour – whisk again.
ꕤ Add yogurt and continue to mix.
ꕤ In a separate bowl, beat your egg whites until soft peaks form.
ꕤ Fold whites into your batter and gently mix until well combined.
ꕤ Pour into a 20cm cake pan lined with baking paper and bake for one hour.
Your cake should rise quite high, so make sure your baking paper has some height to the sides – upon cooling it will settle.
You can enjoy it warm or cold, plain or dressed up with any combination of icing sugar, cream and fresh fruit – whatever is in accordance with your health goals.
