If you’ve been craving pizza but want to keep on track, this chicken crust pizza is about to become your new favourite!
High in protein, low in carbs, and full of flavour — all the satisfaction of pizza without the consequences.
Ingredients
⧽ 500g chicken mince
⧽ 50g grated parmesan cheese
⧽ 2 eggs
⧽ 1 tsp Italian herbs
⧽ 1 tsp garlic powder
⧽ Salt + pepper
Method
⧽ Preheat your oven to 200°C (fan-forced).
⧽ Mix all the base ingredients together in a large bowl until well combined.
⧽ Spread the mixture thinly onto a lined baking tray — the thinner, the crispier your base will be.
⧽ Bake for around 25 minutes or until golden brown and cooked through.
⧽ Remove from the oven and allow the base to set for about 5 minutes.
⧽ Increase the oven temperature to 220°C, add toppings of choice and bake for another 10 minutes, or until the cheese is melted and golden brown.

Tip
Make sure your mince mixture is nice and thin to ensure a crispy base.
If you find your base is sitting in liquid, strain it off, flip the base and in some cases, consider giving it a short blast under the grill.
If you’re baking it on baking paper, remove the paper once the base has set to allow heat through the understand of your tray.
