Choc Mint Protein Balls

Our favourite healthy snack! Loaded with protein and healthy fats these little ones are a proven winner. They are quick and simple to make and you can easily change up the ingredients to create many flavour variations. I like to make mine into bite sized portions and enjoy 2 or 3 for morning or afternoon tea… although with the kids around, they never last too long!

Ingredients

✦ 1 cup Rolled Oats
✦ 1/2 cup Dates
✦ 2 tablespoons Coconut oil
✦ 1 scoop of IsaPro [Vanilla Protein Powder] or Choc Mint IsaLean Powder
✦ 1/4 cup dry roasted Almonds *
✦ 1 tbs Pepitas
✦ 1 tbs Sunflower seeds
✦ 50 grams dark Choc Mint Chocolate
✦ On a plate sprinkle 1 tbs chia seeds and 1tbs desiccated coconut [optional]

** or your choice of nuts.

Method

✦ Cover dates with water in a small saucepan and slowly simmer until soft.
✦ Combine Oats, Protein and seeds to a bowl.
✦ Roughly chop Dark Chocolate & nuts and add to dry ingredients.
✦ Mash the dates and add Coconut oil.
✦ Once cool, combine with dry ingredients and mix thoroughly.
✦ Wearing gloves, roll small balls and rest on your plate of chia and coconut.
✦ If they feel a little dry and crumbly, mix through a small amount of water or maple syrup.
✦ Allow to set in the fridge for a good half hour.

Your protein balls should be stored in an airtight container in the fridge and can last for up to 2 weeks and in the freezer for 2 months. But mine never last more than 3 days!
