These fluffy, delicious muffins are a healthy flour and sugar free breakfast or snack option that not only use up your overripe bananas, but packs in protein, healthy fasts, naturally sweetened plus quick and easy to make.
Ingredients:
✦ 2 over-ripe Bananas
✦ 60g Peanut Butter
✦ 1 Egg
✦ 60g Vanilla Protein Powder
✦ 1 tsp Baking Powder
✦ Optional; 1/4 tsp Cinnamon
Method:
✦ Pre-heat the oven to 170°C
✦ In a bowl, mash your bananas.
✦ Then add Peanut butter + egg and mix well.
✦ Gently fold in Protein Powder, Baking Powder and Cinnamon.
✦ Pour into patty papers and dress with your favourite toppings.
✦ Any combination of Pepitas, Sunflower & Chia seeds, Choc Chips, Berries and nuts
✦ 20ml Milk of your choice if you use a plant based protein.
