Fluffy Keto Pikelets

If you want pikelets without the consequences then you must try these!

Thick, fluffy, delicious & guilt-free – not to mention easy to make!

Ingredients

✒ 2 Eggs
✒ 1 tsp Coconut oil
✒ 1/4 cup Milk [I use unsweetened almond or coconut]
✒ 1 cup of Almond Flour [not almond meal]
✒ 1/2 tsp of Baking Powder
✒ 1 scoop of Vanilla Protein Powder [optional]

Method

✒ Whisk eggs, coconut oil and milk.
✒ Mix Almond flour, baking powder and protein powder in a separate bowl.
✒ Gently fold the dry ingredients to the wet ingredients.
TIP If time permits, leave your batter to rest for 30 minutes.
✒ Grease  a non-stick pan and place on a medium heat.
✒ Add portions of batter and cover with a lid.
✒ In around 2 minutes [or until little bubbles have formed] flip your pikelets, replace the lid and cook for a further 1 – minutes.

Serve with maple syrup & fresh berries [optional: a dollop of greek yogurt or a drizzle of maple syrup]
