Layered Apple Cake

This healthy apple cake combines wholesome ingredients with the irresistible flavour of sweet Pink Lady apples with just the right amount of cinnamon spice, creating a treat that’s as nutritious as it is delicious.

You can easily adjust the sweetness according to your preference. If you prefer a sweeter cake, you can increase the amount of Stevia or substitute it with your preferred sweetener – or you can leave the sweetener out completely and add an extra apple.

Ingredients:

𓇣 4 Pink Lady Apples (peeled, cored and finely sliced)
𓇣 3 Eggs
𓇣 1/2 cup Milk [of your choice]
𓇣 40g melted butter
𓇣 1/4 cup Stevia [optional]
𓇣 3/4 cup Wholemeal Spelt Flour [or flour of your choice]
𓇣 1 tsp Cinnamon
𓇣 1 tsp Baking Powder
Toppings:
Flaked Almonds
Maple Syrup [optional]

Method:
➳ Preheat the oven to 170°C or 150°C for fan-forced.
➳ Peel, core and finely slice your apples.
➳ Whisk eggs, milk, vanilla and cooled butter.
➳ Add stevia.
➳ Sift in flour, cinnamon and baking powder and combine until smooth.
➳ Add sliced apples and mix through [reserving a small portion for the top of the cake]
➳ Add mixture to a lined loaf tray and top with remaining apples slices and flaked almonds.
➳ Bake for around 1 hour – cake should be light golden brown.

Allow to cool slightly before drizzling with maple syrup [if you wish].

Delicious served warm on it’s own or for a decadent option, serve with custard, cream, ice cream or all of the above!
