This salad is fresh, zesty, bursting with flavour and easy peasy lemon squeezy!
Simple to make and ideal in bigger batches to last a few days.
Another option is to construct these in salad jars! Either way this salad’s a winner!
Ingredients:
✻ 1 cup cooked Quinoa
✻ 1 cups of chopped Cucumber
✻ 1/2 cup diced Red Onion
✻ 1 tin of Chic Peas
✻ 1 Capsicum
✻ 1/2 block of Feta
✻ Parsley & Mint
✻ Juice from one Lemon [or lime if you’d prefer]
✻ Salt + Pepper to taste
+/- ingredients but this combo is definitely a good one.
